Caprese Grilled Cheese

Ingredients
- 2 tablespoons olive oil
- 2 tablespoons butter
- 8 slices sourdough bread
- 1 tomato, thinly sliced
- ½ (8-ounce) package mozzarella cheese, thinly sliced
- 6 fresh basil leaves
- 2 tablespoons balsamic glaze
- salt and pepper, to taste
Directions
- Preheat a skillet over low heat.
- Chop the tomato, basil, and mozzarella cheese.
- Spread butter on one side of each slice of sourdough bread.
- Place 4 slices of bread, buttered side down, in the preheated skillet.
- Layer each slice of bread with tomato slices, mozzarella slices, and basil leaves.
- Drizzle each sandwich with balsamic glaze and olive oil, then season with salt and pepper to taste.
- Top each sandwich with another slice of sourdough bread.
- Cook the caprese grilled cheese for about 3 minutes on each side, or until the bread is golden brown and the cheese is melted.
- Serve and enjoy!
