Cranberry Brie Bites

Ingredients
- 1 (7 to 8 ounce) prepared pie crust (1/2 of a 14 ounce package; see Tip)
- ½ cup prepared cranberry sauce or homemade
- 3 ounces Brie cheese, cut into 24 pieces, divided
- 1 tablespoon chopped fresh chives (Optional)
Directions
- Preheat the oven to 450°F and lightly spray a mini muffin tin with cooking spray.
- Roll out the pie crust on a flat surface to about 12 inches in diameter. Use a 2-inch biscuit cutter to cut out 24 circles from the dough, rerolling scraps if needed.
- Press each dough circle into a muffin cup and prick with a fork. Bake for 5-7 minutes, or until lightly browned. Remove from oven.
- Place 1 teaspoon of cranberry sauce in each cup, then top with a piece of Brie.
- Return to the oven and bake for another 5 minutes, or until the cheese is melted and the sauce is hot.
- Let cool for 10 minutes. Sprinkle with chives if desired, and serve warm.
