Potato Skin Bites

Ingredients
- 3 Russet potatoes, scrubbed clean
- 2 Tbsp. olive oil
- Kosher salt
- Freshly ground black pepper
- Pinch cayenne pepper
- 1 tsp. garlic powder
- 1 1/2 c. shredded cheddar
- 6 slices bacon, cooked and crumbled
- Sour cream, for serving
- 3 green onions, thinly sliced
Directions
- Preheat oven to 400°F and slice potatoes into ½” coins
- In a bowl, toss the potato rounds in olive oil. Season with salt, pepper, cayenne, and garlic powder.
- Place the potatoes in a single layer on a baking sheet and bake for 30 to 40 minutes; until lightly brown and tender. Flip halfway through.
- Top each potato with cheese and bacon. Broil until melted; approximately 2 minutes.
- Top with sour cream and green onions for garnish. Enjoy!
