Ingredients
- 1 ½ pounds of small new potatoes
- 3 tbsp olive oil
- 2 tsp kosher salt
- 1 tsp coarsely ground black pepper
- 1 large onion, chopped
- 1 tsp fried marjoram, thyme rosemary

Directions
- Preheat oven to 450°F, position the rack on the bottom shelf, and cut the potatoes into halves.
- Heat oil in a large ovenproof pan over high heat.
- When almost at the smoking point, add potatoes and onion.
- Stir together for 1-3 minutes until the potatoes begin to brown.
- Transfer the pan to the preheated oven for 20 minutes. Toss with kosher salt, pepper, and herbs; stir.
- Continue to cook for 15 to 30 minutes.
- When potatoes are fork tender, remove from oven and serve.
