Pepperoni Pizza Bites

Ingredients
- Olive oil spray
- 1 cup unbleached all-purpose flour, whole wheat or gluten-free mix
- 2 teaspoons baking powder
- 3/4 teaspoon kosher salt (use less if using table salt)
- 1 cup non-fat Greek yogurt
- 2/3 cup marinara or pizza sauce
- 1 cup shredded part-skim mozzarella cheese
- 1 ounce turkey pepperoni, chopped
- Crushed red pepper flakes, for serving (optional)

Directions
- Preheat oven to 375°F and spray two 12-cup muffin pans.
- Combine flour, baking powder, and salt in a bowl.
- Add yogurt and mix until well combined. It will look crumbly.
- Lightly flour a work surface and knead the dough a few times until the dough is only slightly tacky.
- Divide the dough into 16 equal balls and press each into the muffin cups, allowing it to slightly up the sides.
- Bake for 15 minutes, remove from oven, and press down slightly in the middle to create a cup.
- Top each cup with 2 teaspoons of sauce, 1 tablespoon of cheese and pepperoni.
- Put the tins back in the oven and bake for another 3 minutes, until the cheese is melted.
- Remove from the oven and allow to cool for 2 minutes.
- Serve warm with ranch or your choice of dipping sauce. Enjoy!
